Lime Tostitos or the lime cashews from Trader Joe's seem to be a lot of people's kryptonite. I have witnessed someone licking the tostitos with the green flecks of salty goodness on a tortilla chip, heck I have witnessed myself.
Be sure you are cool with raw cashews as some people don't have the best time digesting them. This is a simple 2 minute snack for you or guests. The oil from the lime zest acts like glue so that the sea salt and chipotle adhere to the cashews. The snack will be softer than a roasted cashew, which again you can use as well.
Chili Lime Cashews
180 grams (6 ounces) Raw Cashews
1 each Lime
1 tsp Chipotle Powder
1 tsp Fine Sea Salt
1. Using a microplane, zest entire lime directly onto the cashews.
2. Sprinkle salt and chipotle powder and toss to combine.
3. Add 2 drops (yes drops) of lime juice if desired to create additional glue for salt and spices.
*Chipotle powder is made from ground smoked jalapenos. Full of flavor. For a different flavor you could substitute smoked paprika. Cayenne is too spicy in this application.
